Leaf vegetables like agathi, chekkurmanis, waterleaf, drumstick leaf, basella and colacasia leaf are rich in fibre, minerals and beta carotenes. Cucurbits like ash gourd, pointed gourd, ivy gourd, kekrol, snap melons and chow-chow are rich in iron and amino acids.
